A delicious & nutritious Chickpea Salad with Avocado and artichokes
Ingredients
240gChickpeas 1 400g can, Drained
165g Sweetcorn 1 can, Drained
12Cherry Tomatoes
1/2 Red Onion Peeled and chopped
1/2 Yellow Pepper Deseeded and chopped
1/2Orange Pepper Deseeded and chopped
1Baby Gem Lettuce chopped
90gramArtichokes 1/2 jar
1Avocado Peeled and chopped
1Lemon Juiced
20gramOlive Oil Drizzle
Salt & Black Pepper
Instructions
Grab yourself a large bowl
First add your drained tin of chickpeas
Next your drained can of sweetcorn
Chop your 12 cherry tomatoes into quarters and add to the bowl
Followed by your chopped onion, peppers and lettuce
Add in your artichokes (drained a little)
Then pop your avocado pieces on top of that, followed quickly by your lemon juice - make sure you pour your lemon juice over your avocado (stops it going brown)
Drizzle with olive oil and season with salt and plenty of black pepper
Finally give it one big mix and you are all set to serve
