
Sweet Potato Salad with Feta, Pomegranate & Mint
Oh my, I developed this Sweet Potato Salad with Feta, mint and pomegranate almost by accident!
Thanks heavens. It was almost a fridge foraged supper, but wow it turned out so great
Soft delicious garlicky sweet potatoes with crumbly Feta, coated in a yoghurt and honey dressing, topped with pomegranate and pumpkin seeds, with a fresh mint twist – oh my!
What are Sweet Potatoes?
There are two types of sweet potatoes mainly. One that we all know is bright orange, the other has a paler creamy appearance. Sweet potatoes have soft and creamy texture when cooked and they are sweet in flavour
Sweet potatoes are native to the tropical Americas and are sometimes referred to as ‘yams’ in America.
Are sweet potatoes actually good for you?
Apparently from my research one sweet potato gives you just over 100% of the vitamin A you need each day. This helps keep your eyes healthy as well as your immune system, your body’s defense against germs. It’s also good for your reproductive system and organs like your heart for example. Theya re also good for digestion
Sweet potatoes are generally thought to be healthier than regular potatoes, partly because of their incredibly high vitamin A content and a lower glycemic index.
Ingredients for your Sweet Potato, Feta, Pomegranate & Mint salad
Sweet Potatoes
I cheated a bit and bought large Sweet Potato wedges for roasting as it was easier
Alternatively just grab your sweet potatoes, wash elm and chop into wedges
Feta Cheese
Feta cheese is a Greek brined white cheese made from sheep’s milk or from a mixture of sheep and goat’s milk.
It is soft, and quite compact to touch. When you cut it it tends to crumble. It has a slightly grainy texture but smooth to taste
Feta is lower in fat than many other cheeses, however, and is considered a reasonable option to eat in moderation.Feta cheese is high in nutrients like calcium and protein. Please be careful though as it’s quite salty to taste and is relatively high in
It is perfect for salads
Pomegranate Seeds
Often you will hear pomegranate seeds referred to as a superfood?? – I’m not sure what that really means .
However in my opinion and from research not only do they look beautiful and taste great they are also high in antioxidants and vitamins, perfect for this salad
I bought mine fresh in Tescos, hower you can get them prefaced in the chilled section at the supermarket now
Pumpkin Seeds
Pumpkin seeds are super nutritious. They also add a great nutty note and crunch to this salad!
Fat Free Natural Yoghurt
Provided and lovely base to the dressing. I just use any basic fat free natural yoghurt
Honey
Any honey will do, whatever you have in your cupboard. Honey ass a lovely additional sweetness
Mint leaves
I really suggest you include fresh mint leaves, then up. They ass such a fresh note
How to roast your Sweet Potatoes for your Salad
If you have whole sweet potatoes simply wash them and cut into wedges
Then simply take your wedges and chopped garlic, spinkle with salt & black pepper, dried thyme and olive oil and toss so they are well coated
Pop in a baking tray or dish and roast for 35 minutes (turning once at the 15 minute mark) until they are soft and golden (but not mushy)
Remove from the oven and leave to cool

How to serve your Sweet Potato Salad
You can eat this salad as a side to many dishes, such as fish or chicken
Or eat it as a main meal – if you do this you will need half the salad
It’s also great at a summer party or a BBQ
What can I do with my leftover salad
I’m not sure there will be much left as it’s so good, but if there is simply pop in an airtight container and store in the fridge for a day.
I donot to freeze as it doesn’t do well in the freezer!
I take my leftover salas in Tupperware o work and eat as my lunch. So much better than a soggy sandwich
Top Tips
- You don’t have to be precious about quantities of ingredients – do what you like
- I also think adding beetroot and spinach would be lovely too

Sweet Potato Salad with Feta, Pomegranate and mint salad
Ingredients
- 500 g Sweet Potatoes
- 1 tbsp Olive Oil or 1 cal spray
- 1/2 teaspoon Dried Thyme
- 2 Cloves Garlic Peeled and finely chopped
- 100 g Feta cheese
- 25 g Hand full of Pomegranate seeds
- 25 g Pumpkin Seeds
- 75 g Fat Free Natural Yoghurt
- 1 tbsp level Tablespoon Honey
- 1/2 Lemon Juice
- Handful of Fresh Mint leaves
- Salt & Black Pepper
Instructions
- Preheat your oven to 200c / 180C fan / 400F / Gas 6
- Prepare your sweet potatoes by washing and chopping into large wedged (no need to peel). Place on a baking tray or a large baking dish
- Sprinkle with the minced garlic, thyme, salt & pepper and finally olive oil. Toss so that all your wedges are covered
- Bake in the centre of the preheated oven for 30-35 minutes (turning once after 15 minutes) Your sweet potatoes should be soft (not mushy) and golden.
- Remove from the oven and leave to cool
- Grab yourself a nice large plate or serving dish and cut your wedges into large chunks. Next crumble your Feta over the sweet potatoes
- In a cup mix your yoghurt, honey, lemon juice and salt and pepper and drizzle over your salad
- Next top with pomegranate seeds, pumpkin seeds and mint leaves
- Season and serve - yum!

This is so easy to make and so delicious.
The sweet creaminess of the sweet potato and the slight tang of the Feta. Goodness it was delicious. I added a few mange tout (or snow peas) in as well, just because I had them left over.
Will definitely be making it again.
