‘Snowy Lanes’ also known as Easy Rocky Roads
Maybe you’d like to call them Christmas Rocky Roads? I call them festive rocky roads
Either way they are so good you’ll need to be careful you don’t woof them all at once!
I’ve made 3 batches before as they seem to disappear before the big day ha ha!
No baking required
That is obviously a really good thing, no oven necessary! Genius
Make them and pop them in an airtight container in the fridge they will keep for a week. I doubt they’ll last that long 🙂
Look how beautiful they look studded with lovely colours….
I love the green of the pistachios, next to the red of the place cherries.
Mix that with cranberries and white and pink marshmallows – flipping lovely!
And I promise they taste even better
Ingredients for your Easy Festive Rocky Roads
To make these lovely rocky roads properly festive I’ve used cranberries, cherries, mini Oreos and pistachios.
You don’t have to use nuts at all if you don’t like them – it’s simply up to you
You could just go berries and marshmallows – whatever you fancy
The mix of dark and milk chocolate make them perfect in flavour and very rich! Cut them up small guys 🙂
Then sprinkle with icing sugar and it’s proper Christmas!
You can add anything you like, try and experiment a bit!
Even though I say so myself they are too good.
So you know how it is when friends and family pop in over Christmas and you want to have coffee and something to offer, well these will do the trick.

The kids love them too as well as the adults! And why not get them to make them?
There’s no cooking at all! NONE!!!
For me the perfect indulgent Christmas treat (get back in the cupboard Mince Pies ….. and make way for the Festive Rocky Roads, they win hands down for me)

Festive Rocky Roads
Ingredients
- 100 g Dark ‘Real’ Chocolate
- 50 g Milk Chocolate
- 75 g Butter
- 2 tablespoons Golden Syrup
- 100 g Mini Oreos halved
- 50 g Digestive biscuits broken
- 50 g Dried Cranberries
- 40 g Pistachio Nuts or Brazils if you like
- 60 g Mini Marshmallows
- 100 g Glacé Cherries halved
- Icing sugar for dusting
Instructions
- Line a 24cm x 24cm tin with greaseproof paper and a little butter.
- In a large pan melt the Chocolate (both types) butter and golden syrup over a low heat, stirring.
- Once melted remove from the heat
- Add Oreos, broken digestives, dried cranberries, Pistachios, marshmallows and Glacé cherries
- Stir really well until everything is covered in chocolate and tip into the tin, loosely press down
- Refrigerate for minimum 3 hours
- Remove from fridge and cut into whatever size pieces you want
- They are very rich so I suggest small - you can always go back for another.
- Finally dust with icing sugar
- Put in an airtight box in the fridge, they will keep for a week if they last that long….

We’re in the process of perfecting our Christmassy rocky road too! You’re so right about these being a great alternative to mince pies, everyone in my house (including the little ones) love mincemeat but I know a lot of people who would prefer something chocolatey instead and these would be perfect. I love the addition of Oreos too, I’ve not seen those used in rocky road before.
