Slow cooker beef bourguignon, easy & healthy
I really thought it was about time we had another slow cooker (or crockpot if you’re from the US) recipe on the blog! After much consideration I settled on a classic, Slow cooker beef bourguignon.
Sounds fancy pants doesn’t it? Well it’s really great, rich red wine gravy with falling apart tender beef that literally melts in the mouth. It’s stuffed with mushrooms, carrots and beautiful fresh herbs – YUM!!
A real winter warmer!
Please trust me it tastes so delicious, AND it’s super easy and once you’ve done the initial browning off of the beef, you simply chuck it in the slow cooker and go off any enjoy your day (or go to work – boooooo) – love that!
Why Slow Cooker / Crockpot Meals?
Well they are the best thing for busy people, really they are.
You simply do a little prep, pop it all in the slow cooker, leave for anywhere between 4-8 hours (depending on the recipe) and leave it all alone!!
Then you have a wonderful warm dinner prepared – voila
So what is Beef bourguignon?
(mine doesn’t have pearl onions, but yours could)
How to make Slow cooker beef bourguignon
It’s easy
Step 1
Fry off you onions, bacon pieces & garlic in 1 cal cooking spray – colour gives more flavour to the dish, tip it in the slow cooker
Step 2
In the same pan fry off your floured meat quickly – again to add maximum flavour to your bourguignon. tip that too into the slow cooker
Step 3
Add your other ingredients and stock, pop the lid on and cook on low for 8 hours (ready often after 6 hours)
Step 4
Thicken the gravy with cornflour or gravy granules to required thickness / consistency – yum
What to serve with your Beef Bourguignon?
I like mine with mashed potatoes – always and some crisp cabbage – delicious
It already has mushrooms and carrots in so I usually find one extra vegetable and mash is enough
Or alternatively made just simply with a big piece of crusty French bread 🙂
The Deets for your Beef bourguignon
As long as your braising steak is lean and all visible fat is removed it’s free (be careful here to get lean steak)
- Your stock cubes are free
- Your veggies are free
- 25g plain flour 4
- 125ml Red Wine is 5
- 1 level tablespoons cornflour is 1
= 10 – so 2 Syns per portion
****However I am not a Slimming World consultant (or linked to SW at all) so you need to check yourself
How long can I store my Beef Bourguignon in the fridge?
Make sure your left over beef bourguignon is cooled down and cold
Then place it in an airtight container or plastic bag – with the air squeezed out and place in the refrigeration
Use within 3 days – and reheat in a saucepan for approx 10-15 minutes until piping hot all the way through
Can I freeze my leftover Beef Bourguignon?
Yes you can – it freezes perfectly
Simply pop your lefty over beef bourguignon into an airtight container and use within 1 month
To reheat – defrost overnight in the fridge, then heat in a saucepan for approx 10 minutes until piping hot all the way through

Well it has to be this one, it has a sear function for browning – so a lot less washing up and a way more flavour for your recipes

Slow cooker beef bourguignon, easy!
Equipment
- Slow Cooker
Ingredients
- Fry Lite 1 cal spray
- 1 Red Onion Peeled & Finely chopped
- 4 Smoked Bacon Medallions
- 2 Cloves Galic Peeled & Finely chopped
- 600 grams Lean Braising steak all visable fat removed
- 25 grams Plain Flour
- 125 ml Red wine
- 500 ml water
- 2 Beef stock pots or stock cubes
- 5 Carrots Chopped into large slices
- 200 grams Chestnut Mushrooms halved
- 25 grams Tomato Puree
- Fresh Thyme
- Fresh Rosemary
- Salt & Black Pepper
- 1 tbsp Gravy Granules / or corn flour with water to thicken gravy
Instructions
- Using a frying pan, sprayed with one cal spray fry off your bacon, garlic and onions, approx 5 minutes. Tip this into your slow cooker
- Next coat your beef pieces in the flour and salt & pepper, there isn't too much flour however this will help brown the meat
- Using the same frying pan quickly batch fry your pieces to brown the meat, approx 5 minutes - do not overcrowd the pan. You can do this in two batches. Tip this in your slow cooker too
- Next add your red wine, water and stock cubes to the slow cooker, followed by your large carrots slices, mushroom halves, tomato puree and fresh herbs
- Give it a quick stir
- Pop the lid on and cook on low for 8 hours (often ready after 6)
- Once cooked add a table spoon of gravy granules to achieve the thickness you like. Then you're all ready to serve
- Check the seasoning and adjust accordingly with salt & pepper if necessary
