One Bowl Pear & Almond Cake

I’ve had this recipe on my list of recipes since I developed by One Bowl Apple Cake (which you all went crazy for :-)) So here it is, my One Bowl Pear & Almond Cake, the sequel. It’s so delicious and very easy. 

A soft delicious buttery cake with the sweetness of chopped pears studded throughout, with a touch of almond and a crunch almond top. It’s so  moist and can be eaten warm as a pudding or cold with a nice cuppa t’s  a soft cake with chunks of fresh pears and ground almonds with a crunchy flaked almond top – BEAUTIFUL 

There is nothing easier and more delicious than my simple One Bowl Cakes, for speed to fill the family. You can eat it warm with custard, cream or simply have a wedge cold with a cuppa! 

When you have fallen pears – make this, it’s so so good. 

 

One Bowl Pear Cake – so easy 

You literally make this cake in one bowl!

By hand, using a hand mixer or stand mixer 

It’s so simple – get the kids making it 

 

Ingredients for your One Bowl Pear & Almond Cake 

Ingredients laid out for pear cake

  • Butter

I use unsalted butter, salted would also be ok. As would baking margarine. I just love using butter in my bakes. This apple cake has a lovely buttery flavour – delicious!

  • Caster Sugar 

Perfect for this cake and many more, finer than granulated. I use golden for a little more flavour but white is fine 

  • Eggs 

3 large Eggs for this recipe (I also use free-range – my preference) 

  • Self-Raising Flour

Helps to lift your loaf cake to the perfect shape. This cake has the perfect crumb structure, so soft and very moist 

  • Pears

Any dessert pear will do. We use 3 in this recipes, peeled, cored and chopped into 1.5cm pieces 

  • Ground Almonds

Adds a lovely background flavory also add to texture 

  • Flaked Almonds 

For the topping, adds lovely flavour and a nice crunch! Also looks super pretty! 

 

How to make your Apple Cake 

***See full recipe card at the bottom of this post*** 

Step 1 

Cream your butter and caster sugar until light and smooth 

Next add one egg at a time beating well between each addition 

Add your fself-raising flour and ground almonds until combined 

Step 2 

Add your peeled, cored and cubed pears 

Step 3 

Tip into your greased (and lined )   spring form tin  and Smoot the top with a knife

Ass a dusting of caster sugar and your flaked almonds , distributing evenly

Finally and that on a baking tray 

 

 

Step 4

Bake your pear & almond cake in the centre of your preheated oven for approx 40 – 45 minutes

Until your cake is firm to the touch and golden brown (or you can stick a skewer in and if it comes out clean it’s baked) 

So golden 

Leave to cool in the tin, sprinkle with icing sugar and serve 

Top Tips for your Pear & Almond cake 

  • Peel, core and chop your pears after you’ve mixed your batter. You don’t want brown pears 
  • Place a baking tray under the tin – you don’t want any spillages on the bottom of your oven 
  • I suggest lining your tin as well as greasing with butter 
  •

Serving suggestions for your pear cake

This cake has a nice dense texture, perfect to have warm with cream, custard or ice-cream (made both?)

And equally as good cold with a brew!

This lovely cake is sturdy enough for a lunch box too!

It’s very very moist due to the amount of pears in there! 

It’s delicious but not too ‘fancy.’ Do you know what I mean?

A good basic – enjoy 

How to store your pear & almond cake 

Please remember this cake is very moist and may go a little soft the next day – but it’s equally as delicious. You can also warm through again if you’d like 

This cake will keep in a tin for 3 days (if it lasts that long)

Can I freeze my one bowl pear cake 

Yes you can.

What I do is cut into wedges and wrap individually in cling film or foil and freeze – good for a couple of months 

When you want your slices leave it thaw at room temperature

Equipment

  • 9 inch / 23cm spring form tin

Ingredients

  • 200 g Butter Softened - salted or unsalted
  • 200 g Caster Sugar I use golden
  • 200 g Self-Raising Flour
  • 3 Eggs Large & Free Range
  • 3 Pears Peeled & cored & cut into 1.5cm cubes
  • 50 g Ground Almonds
  • 2 tbsp Milk
  • 15 g Caster sugar For the topping (again I use golden)
  • 25 g Flaked Almonds

Instructions

  • Preheat your oven t0 180C (fan) 200C / 400F / Gas 6
  • Grease & lined your springform tin with butter
  • In a stand mixer or with a hand whisk, or by hand, cream your butter & caster sugar until light and airy
  • Next add one egg at a time and beat well after each addition (if it looks like it is curdling add a tablespoon of your flour)
  • Add your flour & ground almonds and 2 tablespoons and mix well utill you have a smooth batter.
  • When the batter is made, peel core and chop your pairs into chunks (approx 1.5cm cubes)
  • Add your pears to your batter and mix well
  • Tip your batter into your prepared tin, smooth to the edges with a spoon and sprinkle over your caster sugar and flaked almonds
  • Pop your tin on a baking tray and bake in the centre of your preheated oven for 40-45 minutes. You cake should be golden and firm to the touch
  • Leave in the tin to cool slightly and then remove (if you do this too early it may break)
  • Dust with icing sugar and serve!

    I added ground ginger to the flour and chopped crystallised ginger to the sponge the combination of ginger and pear is amazing.
