
Mango and Avocado Salad with Black beans
Oh summer in a bowl! This mango and avocado salad with black-beans is the perfect accompaniment to any summer BBQ or any summer meal now I come to mention it
Its fresh, juicy, sweet, creamy and with a lovely kick of chilli (the amount of kick, is up to you)
It’s one of my fave salads (it’s actually my sis’s recipe – the lovely Kathy – so thanks hunny once again! It originally came from somewhere on the internet but has been changed over the years) to throw together in 10 minutes
Ingredients for your Mango, black bean and avocado salsa
This recipe is so simple – not too many ingredients at all, however once combined they make a stunning refreshing salad
- Black beans
- Avocado
- Mango
- Red onion
- Tomatoes
- Coriander
- Lime Juice

Could I add other things to my Mango Salad?
Yes, yes
Maybe cucumber or sweetcorn or chopped peppers? – anything you fancy really
How do you tell if a mango is ripe?
The worst thing is to have a mango that is not ripe and too hard
If a mango is ripe enough to eat, it is soft. You can tell this by pressing gently on it with with your fingers. The skin will yield slightly showing a dent
If your mango is too hard you simply need to leave it for a while before eating
How do you make your Mango, Black bean & avocado salad?
Well to be honest it could not be simpler
Simple mix all your chopped ingredients together and dig in. Below on the recipe card is a full method
How long can I keep my mango & avocado Salad?
I tend to prep it an hour or so before I need it but you can make it a little more in advance
Just be careful that your avocado doesn’t go brown, so make sure you have plenty of lime juice on it
Cover and pop it in the fridge
Leftovers are also great the next day! Again it needs refrigerating!

Mango and Avocado Salad with Black beans
Ingredients
- 400 g Black Beans drained and rinsed
- 1 small mango stoned, peeled and chopped
- 1 small avocado stoned, peeled and chopped (2 if you like)
- 200 g cherry tomatoes, red or yellow halved
- 1/2 red chilli deseeded and chopped
- 1 red onion, small peeled and chopped
- 1 Lime zested & juiced
- ½ pack coriander or a good handful chopped
- Salt & freshly ground black pepper
Instructions
- Grab yourself a bowl
- Pop in your drained black beans
- Add your chopped mango, chopped avocado, halved cherry tomatoes, chilli, red onion and stir
- Next add your lime juice, zest and coriander and stir through
- Season to taste
- Serve or pop in the fridge until you are ready to serve
