
Golden Syrup Loaf Cake
OOOO another loaf cake! I really do love loaf cakes (I think I possibly have enough for a book 🙂 ) So my latest addition to my collection is a simple Golden Syrup Loaf Cake. Sort moist and simply sweet – perfect with a brew!
Or maybe with cream custard or ice cream warm as a pudding – delicious!
So what is Golden Syrup?
The official words (from Wiki are)
Golden syrup or light treacle is a thick, amber-coloured form of inverted sugar syrup made by the process of refining sugar cane or sugar beet juice into sugar.
It is used in a variety of baking recipes and desserts
Ingredients for your Golden Syrup Loaf Cake

Butter
I use salted butter, unsalted would also be ok. As would baking margarine. I just love using butter in my bakes.

Golden Caster Sugar
Perfect for this cake and many more, finer than granulated, the golden just adds an extra level of flavour. White Caster would also be ok

Eggs
2 large Eggs for this recipe (I also use free-range – my preference)

Self Raising Flour
Helps to lift your loaf cake to the perfect shape . This cake has the perfect crumb structure, so soft and very moist

Golden Syrup (tinned)
I used the tinned version as I believe it’s slightly different from the squeezy bottled stuff. In the US you can use corn syrup
How to make your Golden Syrup Cake

Step 1
Grab a 2 llb loaf tin and grease and line. Or use a loaf liner (they are really great)
Step 2
In a pan gently melt your butter sugar and golden syrup. Leave to cool
Step 3
Beat your eggs and milk together and add to your cooled syrup, butter mix
Step 4
Sift your flour into a mixing bowl and then pour your liquids on top and beat with a wooden spoon until smooth (no lumps)
Step 4
Tip your cake batter into your greased (and lined) loaf tin and pop that on a baking tray
And bake! (see recipe card)
Step 5
Once baked cool on the tin for 15 minutes and drizzle two teaspoons of golden syrup over the top!!
Leave to cool in the tin, slice and enjoy!
Serving suggestions for your Golden Syrup Cake
This cake has a nice texture, perfect to have warm with cream, custard or ice-cream (maybe both?)
And equally as good cold with a brew! It’s soft, moist, rich and a little sticky
This lovely cake is sturdy enough for a lunch box too!
It’s delicious but not too ‘fancy.’ Do you know what I mean?
A good basic – enjoy
How to store your Golden Syrup Loaf
Please remember this cake is quiet moist and will be perfect in an airtight container o cake tin for 3 days
You can also warm through again if you’d like
Can I freeze my Golden Syrup Loaf Cake
Yes you can. What I do is cut into slices and wrap individually in cling film or foil and freeze – good for a couple of months
When you want your slices leave it thaw at room temperature
So go on have a bake of this easy Golden Syrup Loaf Cake

Golden Syrup Loaf Cake
Equipment
- 1 x 2llb loaf tin
Ingredients
- 150 Butter Salted or unsalted
- 150 Golden caster sugar white caster sugar is ok
- 250 g Golden Syrup Tinned
- 2 Large Eggs
- 50 g Milk
- 300 g Self raising flour
- 2 teaspoons Golden Syrup For topping
Instructions
- Pre-heat your oven to 140C (fan )/ 160C conventional / 325F / Gas 3
- Grease and line a 2llb loaf tine (or use a loaf liner)
- In a pan gently melt your butter, sugar and golden syrup (cool)
- In a jug beat your eggs and milk together
- In a mixing bowl sift your self-raising flour
- Once your sugar and butter syrup has cooled, add your eggs & milk mix and stir
- Next all all the liquids to the flour and beat with a wooden spoon until smooth and no lumps
- Pour your batter into your lined loaf tin and bake in your pre-heated oven for 1 hour 10 minutes (please remember all ovens vary so check your loaf cake after 1 hour)
- Once your cake is baked remove from the oven (should be firm ti the touch
- Leave to cool in the tin for 15 minutes and drizzle 2 teaspoons Golden syrup over the top
- Leave to cool and slice and enjoy!
