Buffalo Chicken thighs with egg fried rice is a delicious SPICY dish of baked chicken thighs covered in spicy buffalo sauce,  sat on soft egg fried rice – so very delicious! 

It’s so easy, so tasty and flavour packed and ready in under an hour!! 

We all love an easy chicken dinner don’t we ? – chicken is so so versatile, I love it

Spices & Flavourings for your Buffalo Chicken 

All of the below spices and flavouring are available in the supermarket 

This is a spicy dish, but it’s not too hot. Trust me it’s amazing – I’m eating it on repeat! 

 

 

Step by Step too the perfect Buffalo Chicken Recipe 

Full details on the recipe card below 

Step 1 – Buffalo Chicken Thighs

Pop your chicken thighs on a baking sheet or ovenproof  dish like this – and add your spices and garlic

Bake in the oven for 30 minutes

Remove from the oven and add a teaspoon of Hot Buffalo sauce to each thing piece and pop back in the oven for a further 10 minutes 

 

 

Step 2 – Your Egg Rice for your Buffalo Chicken

In a large non stick frying pan add your peas and precooked rice (season) – heat for 5-7 minutes until piping hot 

 

Step 3 – add the eggs 

When you are ready, pour in your beaten eggs and stir until cooked 

Step 4 – Plate up 

Divide your rice between your plates and add two chicken thighs directly on top of the rice, I like to break my thighs up a little 

If you have any pan juices in the baking tray add them over the top of the chicken

And serve!

This recipe can serve 3, but if you’re really hungry it will do 2! 

 

What to serve with your Buffalo Chicken 

To be honest this recipe is a full meal

However if you want too stretch it a little further and make it a bigger meal you could serve it with: 

  • Steamed broccoli 
  • Bok Choi 
  • Bigger rice portion

Buffalo Chicken Left Overs 

If you have any left overs,  cool and store in the fridge for 24 hours 

It’s great cold too! (you can chop it up and eat it cold for lunch) 

If you want it hot, make sure if you reheat in the microwave it is piping hot ALL the way through (we don’t want poorly tummy’s)

Ingredients

  • 600 g chicken thighs boned & skinless
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Garlic pepper
  • 1/2 teaspoon Chicken seasoning
  • Salt
  • 6 teaspoons Hot Buffalo Sauce
  • 300 g Cooked rice
  • 150 g Garden Peas Frozen
  • 2 Eggs Free-range
  • Salt & Black Pepper

Instructions

  • Pre-heat the oven 200C (fan), 220C / 425F / Gas 7
  • Take a baking tray and pop your 6 chicken thighs in - spaced out
  • Next add your seasoning, garlic, garlic pepper and chicken seasoning
  • Pop in the oven and bake for 30 minutes
  • After 30 minutes, remove thighs from the oven and add one teaspoon Buffalo sauce over the top of each thigh and bake for a further 10 minutes
  • Whilst they are in the oven grab a large nonstick frying pan
  • Add your frozen garden peas and cooked rice, add salt and pepper to taste
  • Cook your rice and peas for 5 - 7 minutes stirring ,until piping hot
  • Pour in your beaten eggs and stir until the eggs are cooked, you might want to remove from the heat as the eggs will continue cook
  • Now it's time to plate up, divide you egg fried rice between your plates and add your baked buffalo chicken thighs, you may want to break them up a bit
  • If you have any juices in the tray add over the top of the tights and dig in! Spicy
